Jackfruit in Roasted Coconut

  • Dehydrated vegetables:

    Sliced Jackfruit Chunks

     

    Roasted Coconut Mix:

    Grated Coconut, Turmeric, Red chilli, Coriander, Garam masala, Cumin Seed, Salt

  • 1. Rehydrate the dehydrated Jackfruit covered for 20 mins in hot water.

    2. Rehydrate the coconut mix by moistening it with cold water. Mix enough water to make it into a thick gravy.

  • 1. Pressure cook the hydrated jack fruit with a dash of salt, turmeric & red chilly powder for 3-4 whistles on a low flame

    2. Next, open the cooker and add in the Roasted coconut masala.

    3. For the garnish, In an another pan, heat some coconut oil, add mustard seeds & 2 to 3 whole Red chilly. When the mustard starts to crackle add it to the jackfruit.

    4. If required, add 2 tablespoon of curd.

Jackfruit Nadan Curry

  • ​Dehydrated Vegetables:​

    Jackfruit, Onions, Small Onion, Garlic, Ginger, Curry leaves

    Masala powder:

    Red chilly Powder,​ Coriander powder​, Garam Masala​, Black Pepper​, Fennel seeds, Turmeric Powder​, Salt​

  • 1. Rehydrate the Jackfruit for 20 mins in warm water.

    2. Rehydrate the vegetables melange in warm water for 10 mins.

    3. Drain the jackfruit & vegetables and keep aside.

  • 1. Pressure cook the jack fruit with sufficient water, a dash of turmeric & red chilli powder for 3-4 whistles on a low flame.

    2. Meanwhile, In another saucepan, heat 2 tablespoon of coconut oil & sauté the vegetables till translucent. To this add in the Nadan masala, roast it well .

    3. Now add a bit of water, bring it to a boil.

    4. Add in the jackfruit to this masala mix and cook for 2-3 mins.

    5. For the garnish, heat one Tablespoon coconut oil, mustard seeds & 2 - 3 whole Red chilly. When the mustard starts to crackle pour it into the Nadan Curry.
