Kappa

  • Dehydrated Vegetables:

    Sliced kappa (Tapioca) Chunks

     

    Coconut mix:

    Grated Coconut, Madras Onions/Shallots,Green Chilly, Cumin Seed, Garlic, Turmeric powder, Salt

  • 1. Hydrate the tapioca for 20 mins in hot water

    2. Mositen the coconut mix by spraying it in cold water. Use very little water.

  • 1. In a pressure cooker, cook the tapioca for around 3-4 whistles with some turmeric & salt. You should use the hydrated water infusion.

    2. Once ready, open the cooker and stir in the moistened coconut mix .

    3. Finally heat some coconut oil, temper the mustard seeds, curry leaves and whole red chillies & Garnish.

    Savour your homeland salivations with this authentic Kappa mash.

Jackfruit Mash

  • Dehydrated vegetables:

    Sliced jackfruit chunks

    Coconut Mix:

    Grated Coconut, Madras onion, Green Chilly, Garlic, Cumin Seed, Turmeric powder, Salt

  • 1. Rehydrate the jackfruit for 20 mins in hot water.

    2. Moisten the coconut mix by spraying in cold water

  • 1. Pressure cook the hydrated jackfruit with turmeric & salt for around 3-4 whistles

    2. Once ready, open the cooker and stir in hydrated coconut mix .

    3. Finally heat some coconut oil, temper the mustard seeds, curry leaves and whole red chillies & Garnish.
